Eight O'Clock Meals

This is what I had for dinner the other night.... at eight o'clock. Our lives have gotten to the point where almost every minute of the day is spoken for. My life especially. Between work, home, Sydney and organizing a Kids of Steel Triathlon, I have no time to even feed myself. Late night meals once Sydney has gone to bed have become normal.

I am looking forward to the day when I do not have to worry about work. The day when I will be able to focus on my family and on maintaining the household. I look forward to having a spare moment at night to sit down and read a book. I just hope it happens soon because I am tired.

An Early Spring Rain

There is something about waking up to the sound of rain on your window in the morning.

I am not talking about a thunderstorm or rain pouring down. I am talking about grey skies with a light constant drizzle. I love it. It makes me wish I could stay in bed all day with my family and watch old movies. I start to crave tea and hearty soup and all of those comforting warm foods. I start to break out the fuzzy socks and the over sized sweatshirts and I search the linen closets for the softest blankets in the house.

I love the rain.

Of course, none of this is actually happening because I am at work. But I do have a nice cup of Chai tea and my computer to keep me warm. And at the end of the day I will be able to cuddle up with my little girl and enjoy my evening.

Happy rain day everyone!

Turkey Dinner Soup

My dad always seems to make far too much food when we have family dinners. Easter dinner was no different. When he told me that he was going to make a 27 pound turkey I started planning meals with the left over turkey.

I decided to put together a huge put of turkey soup and freeze some into individual portions for dad. It is a toss together kind of soup and there are no exact measurements for any of the ingredients.

Recipe ~
~ Bones from turkey
~ Water
~ Turkey meat
~ Carrots
~ Celery
~ Onion
~ Rice
~ Seasoning to taste

How to:
~ Boil the bones from the turkey in enough water to cover about half of the carcass (I know.... gross term)
~ Add spices and allow to simmer for several hours
~ Remove bones
~ Add turkey meat and vegetables
~ Simmer on low for two hours
~ Add rice and simmer for 5 minutes
~ Take off of heat and serve immediately or separate and freeze

A Day in the Park

While in Lethbridge, we were able to enjoy some beautiful spring weather. Sydney tried out the swings at the park for the first time and spent a solid half hour on the slide. Note how dusty she got. She could not have been happier.

Easter

Long weekends are amazing. It means more time spent with family and loved ones and another excuse to get out of town. I home you all had a great Easter. Ours was amazing.

Sydney was way to tiny to even think of doing anything last year, so this was the first time that the Easter bunny paid her a visit. We hid big plastic eggs all over the living room and she had so much time finding all of them. She would crawl over to one, pick it up, hold it in the air and yell "Dad!" Which meant, "please put this in the basket for me so that I can move on."

Here are a few photos from that morning:
