With summer coming to an end I decided to toss together one of my favourite summer dishes... Pico De Gallo!
There is something so fresh about a great homemade pico. I became addicted to it the first time I went to Mexico and have craved it constantly ever since.
The Necessities:
~ Four large tomatoes
~ Fresh cilantro ( I used about 8 tablespoons but I like a lot)
~ 3 Tbs Lime juice
~ One jalapeno pepper
~ One medium red onion
The Process:
~ Chop the tomato, onion, cilantro and jalepeno pepper
~ Toss together in a large bowl
~ Add lime juice and salt and pepper to taste
~ Store in fridge and serve with chips or see below for the chicken recipe
To Make the Chicken:
~ Pre-Heat the oven to 350F
~ Cut chicken breasts in half
~ Heat 1Tbs of olive oil in a pan at mid-high heat
~ Place chicken pieces in the pan to sear the outsides (this avoids that slimy baked chicken texture)
~ Place the seared chicken in a glass baking dish
~ Cover the chicken in about 2 cups of pico de gallo
~ Place in the oven and bake for approximately one hour or until the chicken is cooked through
This is a super simple recipe but it is packed with healthy flavour!
